It’s the online seasonal baking club! For those of you that are new, I put out a seasonal recipe bundle with Belgian baking recipes centering around one theme. The one for Spring is all about breakfast breads and desserts. Do join us!
The recipe bundle, you guessed it, is all about Spring baking.
It has recipes all about the season and dives into the tradition of festive breakfasts and having late breakfasts and finishing off the day with several desserts.
It’s called ‘Belgian Spring Baking - seasonal recipes for breakfast and desserts by a Belgian pastry chef’.
Going to a market and buying all the yummy things or opening the doors and the windows and having crispy, fresh buns and rolls on a weekend day.
But also having those same buns with family for Easter brunch and finishing off the day with desserts, ready for everyone to scoop as they like.
Sure there could be big meals for Easter or a holy/first communion, or the less religious approach of the ‘lentefeest’, or ‘Spring celebration’, think lamb or rabbit and the sacrificial lamb made of ice cream the designated child gets to chop the head off of and show off the blood - a grenadine capsule- pouring out of its neck. Not creepy at all.
But if you’re a smaller gathering or it’s just a Saturday/Sunday, bread rolls with all the toppings I talk a bit about in the bundle and a bunch of desserts is the way to go.
All the recipes included in the bundle are true Belgian classics.

As always, this bundle has recipes for all different baking skill levels, from beginner to more advanced.
I’d say this bundle starts a little more on the ‘has done some baking’ bit of the scale rather than starting at the total beginner side but I do share all my steps and tips and tricks so none of these should be too much if you’ve baked a few things before.
While it’s all about things people would get from the bakery or make at home to share with loved ones, most recipes do make smaller amounts. Perfect for just a few people and you can always double the recipe for a larger gathering.
Each recipe comes with a notes section with all my tips and tricks as well as a general notes section at the end of the bundle guiding you through the basics of proofing dough, working with gelatine, pre-heating your oven...
The recipe bundle is available in English right now. I normally have a Dutch version of everything but it’s just the one in English for now this time.
The bundle is available in print in the US, Canada and the UK for £10, roughly $12 US.
It should be available in most other countries across the world too and takes around a week to arrive after you’ve placed your order. If it turns out it’s prohibitively expensive to send you a print copy if you’re somewhere else in the world, I’ll send you a message to let you know and we can see what we can do.
Digital copies are included with any print copy and digital copies on their own are £7.
Sadly the bundle isn’t available in the EU, see the bottom of this article for a note on that.

Review of the Fall bundle!
If you didn’t see this the first time, Eustacia bought the Fall bundle back in October/November and wrote about baking the apple loaf cake and the mokken biscuits.

Unfortunately I haven’t had the chance yet to figure out exactly what I have to do to have the bundle be available in the EU. That means that sadly the recipe collection won’t be available if you live in the EU, for now at least. Being a Belgian citizen, I’d like some confirmation on that first. I love that I have people in a lot of EU countries who read my articles but you’ll have to bear with me while I figure that out.
And it’s of course not Spring across the whole of the planet!
