What a fascinating read Sarah, who knew there were so many variations of the Belgian (or Brussels) waffle?

When we lived in The Netherlands stroopwafels were eaten all the time, probably similar to a digestive biscuit in the UK.

Footnote 5 - I’m actually originally from St. Louis and the waffle turned waffle cone is one of our city’s most cherished unproven myths. But I never heard about Belgian waffles at that fair; it was always said the waffles supposedly rolled to hold ice cream were Syrian in origin.

Loved the descriptions of how all the different waffles are used and eaten.

Oh yes, I read about the ice cream cones too! Lots of other things too that were allegedly invented at the fair; cotton candy, iced tea, burgers... I read through everything I could find, old articles, menus... and no Belgian waffles nor mentions of a Greek-American man selling Belgian products, just the Syrian man and his rolled up waffles. I'm fascinated by how sometimes Wikipedia allows things to stay up without being substantiated but figured it was worth a mention in the footnotes in case anyone had more details. And thank you, happy to hear you enjoyed reading about all the different waffles🙂.

I actually realised I even left out two! There are also all the oublie waffles, thin rolled up waffles you could argue are technically a wafer and several waffles called family waffles similar in size to a Brussels waffle but thin like the butter waffles! Ha! Oh, well!

Oh my Sarah. I think you should put a warning at the very beginning of your articles "Do Not Read on an Empty Stomach" I'm going to be craving yeast-raised waffles until I make some. Dang they look good!
