It’s a collection of recipes all about Spring baking and specifically about the tradition of having a festive breakfast to celebrate Easter or just ‘Sunday’ and ending the day with desserts.
Let’s take a look at everything we’re baking in this seasonal baking club where the price of admission is the cost of the recipe bundle and the party happens in your own kitchen.
Everything included in the booklet you’d either buy from the bakery or make at home on a Spring weekend and especially for Easter.
Here’s everything we’re making
Pistolet buns
Traditionally stone-baked and super crispy on the outside with an almost impossibly light crumb.
Sandwich rolls
Sweet but not quite as heavy and rich as brioche with a soft crumb and perfect for sweet and savoury toppings.
Oven-baked ham and cheese sandwich rolls - not together, each on their own roll - were actually a favourite with professional Belgian cyclists for decades but if you’ve read the ‘Wait, is that a Belgian pie?’ post, you knew that already!
We call bread toppings ‘beleg’; an overview of some of them’s in the collection too.
A rustic raisin loaf
Another sweet one but again not too sweet and perfect at the end of the meal with a strong cup of coffee.
Belgian chocolate mousse
Now desserts here are ‘family’ style so we don’t serve them in individual dishes. They’re made in a large serving dish and everyone can scoop however much they like.
The chocolate mousse is as old-school as they come, rich and slightly sweet with enough bitterness to still taste the dark chocolate.
Riz conde
A firm and rich rice pudding with a layer of tinned fruit on top. Call it kitsch, who cares, it’s fun, it’s celebratory and well, that’s what kitsch is. It’s also unbelievably yummy.
Elderflower lemonade
Okay, technically not a dessert or breakfast bread but super festive, very yummy and just so cheerful. Naturally fermented and sparkly.

All orders are manually processed by me so it does take a week to 10 days for them to arrive.

Speaking of the Fall bundle and the bundle-bundle, Sarah - not me, that would be odd - bought the Spring and Fall bundle and has already started baking.
