Interesting!

In the UK, Crème Fraîche is seen as a lighter alternative to 'proper' cream, our standard Sainsburys supermarket one contains 12% fat, against its Whipping Cream in the same range which has 17% fat.

All very yummy though! 😊

Interesting because crème fraiche here in the UK is still cultured according to the ingredients so similar to the French version you can also get in Belgium but not like the dialect word for whipped cream. But yeah I do remember it being a thing that crème fraiche was supposed to be a 'diet' option. I'm not sure what whipping cream you're getting at Sainsbury's though🙂, the single cream has 17 percent fat but good luck whipping that without additives, the whipping cream has 40 percent https://www.sainsburys.co.uk/gol-ui/product/sainsburys-whipping-cream-300ml.

Ooh, that makes much more sense then. I was honestly wondering if you bought single cream to whip😅. I do mention in my books how to find the right percentage of everything to compare products for anyone who's reading this wondering how to work out fat percentages etc.🙂.

This is a great post. I’m from England and moved to Canada about 11 years ago. Almost right away I found that it was not possible to find double cream 🫢. Also the cream is labelled by percentage here and the highest fat content in standard cream is 35%. It does whip but not to the texture I was used to be able to getting. On the plus side it is nice and light. I eventually found some double cream in a tiny little glass bottle, nowhere near enough for baking!

Thank you, Abby! Yeah double cream is %50 or so and very difficult to find anywhere else but I wouldn't use that for whipping, that feels a bit much. To me %40 is just right for whipping cream. If you've got industry wholesalers near you, they might carry %40 cream.

Oh, how I miss British cream! I find the German stuff very depressing. The highest percentage fat I've found is 33 - stabiliser sold separately in little packets - and though its fine as pouring cream, it looks very sad whipped!

Interesting! Have you had the chance to look at what's available in organic shops?

I had to have a look at what's available, I can't help myself when someone brings up something to research 😂 and found this one at %38 https://www.rewe.de/produkte/nordsee-milch-frische-schlemmer-sahne-38-500g/93924 and Debic as well but that's a professional brand so it comes in 2l cartons which is a bit of a commitment.

Aww, thank you Evelyn! I’ll have a couple more articles coming out in the next few days too. Oh and since you both love baking, you might also like my recipe bundle, hopefully, coming out in September-ish. It’s all about seasonal baking you can do either on your own or with kids during a weekend or school break.
