I’ve always been too unnerved by my mother’s dire warnings of botulism from insufficiently or incorrectly processed canned food to try it myself. For years we’ve either dehydrated or frozen everything. But now I think I’m going to investigate your canning appliance route; as much as I love the chest freezers, they are too expensive over time, and too vulnerable to power outages. Thank you for sharing your experiences!

Weck is a German firm, and they went insolvent a few years ago... when this was announced, virtually every German ran and bought Weck canning jars. They’re the best. Functional and beautiful
